4 Simple Summer Salads

In the spirit of #EatWell #BeWell, I’ve included lots of valuable nutritional info (cancer-fighting foods, antioxidants, celiac-friendly, etc.). TODAY’S RECIPES: Salmon with Raspberry Orange Salsa, Creole Remoulade with Shrimp, Tomato Cucumber Salad, Fruit with Coconut Cream, plus a Guide to Homemade Dressings.

Raspberry Orange Salsa, over salmon

Strawberries, raspberries, blueberries, peaches, pineapple and kiwi all have anti-cancer properties. These fruits contain vitamin C, an important antioxidant for the immune system, a powerful infection fighter and a necessity for our skin’s collagen and elasticity.

Tuna, cod and shrimp contain calcium, protein, magnesium and essential heart-healthy omega-3 fats.
